Tomato Pie

  • 2-3 fresh tomatoes, sliced or cubed

  • 8 fresh basil leaves, finely chopped

  • 1/2 cup spring onion, or other onion, chopped

  • 1 pre-baked 9" pie crust

  • 1 cup cheddar cheese, grated

  • 1 cup mozzarella cheese, grated

  • 1/2 cup of mayonnaise

  • Salt and pepper to taste

  1. Slice and chop basil, set aside.

  2. Slice and chop onion, set aside.

  3. Slice ar cube tomatoes, place in a colander to drain.

  4. Sprinkle salt onto the tomatoes, stir and let continue to drain in colander.

  5. Sprinkle black pepper on tomatoes.

  6. In a separate mixing bowl, add the cheddar cheese, and mozzarella cheese.

  7. Stir in mayonnaise to the cheese till combined.

  8. To assemble the pie, place chopped onion in bottom, then add the chopped basil.

  9. Add the drained tomatoes, spread around evenly in the crust.

  10. Top with the cheese mixture, spread almost to edges of the crust.

  11. Bake at 350 degrees F for about 30 minutes or until lightly browned.

  12. Remove from oven and allow to cool on a wire rack. Serve warm and enjoy!
